it's FRIDAY. FRIDAY. gotta get down on FRIDAY.

Happy fabulous, heartbreaking, last Friday of the summer to me. This time next week, I'll be in a super cute classroom, surrounded by lots of high schoolers who are desperately trying not to fall asleep. But then we are jetting off to a mini vacation weekend that we are super excited about so really, it all balances out.

This week has been steady. Filled with grocery shopping, gymming it up, and finishing my classroom. But on Monday, we were lucky enough to take our boys to hit the zoo.

I've been kicking my own butt with the medicine ball and running lately! I equally love and hate it. 

My teacher corner in my classroom... seriously am in love with what I've done in there this year. 

Out of all the zoos in the area (there are about 3), we just love going to Brookfield Zoo. It's obviously more expensive than the other two options (both free, with the exception of parking) but it's worth every single penny.

When we got to the zoo on Monday, it was perfect zoo weather. Cool, cloudy... I love walking around in weather like that! The raindrops that fell on us a couple of times didn't bother us one bit. Sadly the dolphin exhibit and show were closed. So sad. But our kids had a blast with their cousin, we enjoyed ourselves, and our oldest is already planning that he wants to return there for their New Years Eve event that they host each year!


The "Dinosaurs Alive" exhibit was really awesome!

We couldn't have asked for a better way to wrap up our summer!

meal planning monday.

confessions of a crappy mom: my meal plan this week is probably not the healthiest meal plan in the world in terms of everything homemade, pasta rolled out in my kitchen, and all that jazz. I'm talking jarred Alfredo sauce and other joyous additions that make a busy mama a happier mama.



It's August! Menu

Monday: Roasted Sausage, Peppers, & Potatoes (Thanks, Pinterest!)
Tuesday: Spicy Chicken Broccoli Mushroom Alfredo (see below for recipe!)
Wednesday: Grilled Hawaiian Pork Chops, Zukes, and Sweet Potatoes
Thursday: Leftovers
Friday: Breakfast for Dinner (Biscuits and Gravy!)
Saturday: Burgers and Dogs on the grill, homemade potato salad
Sunday: No idea! No, seriously. I have no idea. Suggestions?

So how about a super easy recipe to spice up an easy go-to pasta?

Spicy Chicken Broccoli Mushroom Alfredo


Ingredients: 
  • Your fave pasta: I had rigatoni in the cabinet
  • Jar of Alfredo sauce (Or you could be super mom and make your own! I've had luck with this recipe)
  • Your choice of veggies: I used frozen broccoli & mushrooms
  • Diced chicken
  • Diced tomatoes and jalepenos
  • Pepper
  • 1/2 tsp. Chili powder
  • 1 tsp. Garlic salt
  • Shredded Parmesan cheese
It's super easy-- while your pasta is cooking and your broccoli is steaming, chop up your chicken to your desired size. I prefer slightly larger pieces. Toss the chicken, cooked broccoli, drained mushrooms, and diced tomatoes and jalepenos (drained) into a pan. Pour the jar of alfredo sauce over the mixture and add pepper, 1 tsp. garlic salt, and 1/2 tsp. chili powder to pan. Heat up until bubbly. Toss in your shredded Parmesan cheese and cook through until heated. Drain your cooked pasta, toss with sauce, and sit down and listen to your family exclaim how tasty it is. Honestly! I about keeled over with the number of compliments I received.

the best mom I can be.

Summer is almost over (first day back at work for me is August 13-- for those keeping count, just a mere 9 days away) and I'm utterly heartbroken.


Being knee deep in the school year (for all of us!) reminds me that being a mom is hard. The constantly juggling act is one that I'm still trying to figure out.

The school year stays filled. Every day is a challenge. There are many work events in the beginning of the year that I'm obligated to attend (orientations, meet the parents, schedule walk around, etc.) which makes it especially hard to ease into a routine. Not to mention, these same events that I have to do as a teacher are also required for me as a parent.

Then we have the perpetual teacher struggles: planning, grading, organizing, getting to know new students and their quirks, getting to know new coworkers and their quirks, meetings, blah blah blah. I think I spend the second half of August in a constant state of exhaustion.

And that's not even including my mom duties: homework BATTLES (and yes, they get ugly), meals (the whole shebang: planning, shopping, making, packing lunches), my boy's fall baseball schedules...

How do you JUGGLE this being a mom stuff? 8 years later and I am still trying to figure out how to be a working mom. It has yet to get easier.

whatcha reading?


It's no secret that I adore books. I'm always on the hunt for something amazing, to suck me in and keep me up long past my bedtime (that's my true test of a good book!). This summer, most of my reading has been light, superficial, mostly free Kindle reads. Some were really good, and some not the best writing, but an interesting and engaging story.

My pick for the week out of all the recent reads would have to be this young adult romance series by Rebecca Donovan:


The Barely Breathing series was one of those that you instantly head to the Amazon store and buy the next book before you are even through with the first. The characters captivated me, especially in books 1 and 2 (book 3 wasn't as good, but still a decent read). The protagonist is likable and flawed, which makes you forgive some of the irritating things she does!
